Delectable Chocolate Snack Balls

These little addictive buggers will get you hook, line and sinker. We recommend making in bulk especially knowing they store in an airtight container in the fridge for up to a week or in the freezer for 3-5 months; can be eaten straight from the freezer too.

With the school holidays coming up and the cold winter weather set in, these snack balls are great to keep on hand when the munchies hit. Gluten free, refined sugar free chocolate snack balls

INGREDIENTS

1 cup raw natural cashew nuts

1 cup dried pitted dates  

¼ cup 100% cacao powder

2 Tbs cocoa powder (optional)

1 cup unsweetened desiccated coconut

2 capfuls of apple cider vinegar

1½ tsp vanilla extract


CONVENTIONAL INSTRUCTIONS

  1. In a powerful food processor, pulse cashews and dates together. Scraping down the sides of food processor a few times. 
  2. Add Apple cider vinegar and vanilla extract and pulse a few more times to combine.
  3. Add cacao and cocoa powders (this gives a more chocolatey flavour), pulse again until well combined, scraping down the sides if need be.
  4. Roll teaspoons size of mixture into balls. Roll the ball in coconut making sure it is well coated.
  5. Set in fridge for an hour before eating.

THERMOMIX INSTRUCTIONS

  1. Place your cashews and dates into your bowl 15 seconds/Speed 9
  2. Scrap down the sides and add remaining ingredients 20 seconds/Speed 9
  3. Roll teaspoons size of mixture into balls. Roll the ball in coconut making sure it is well coated.
  4. Set in fridge for an hour before eating.
