Summer is not summer without a bbq and mates!

You know those times when you’re asked to bring a salad, but you don’t wanna just bring a run of the mill garden salad? This is your answer. It’s bright, it’s refreshing and ready in just few shakes of a tails feather.


beetroot, cucumber, corn, salad, vegan

INGREDIENTS

1 can corn kernels, drained

1 can brown lentils, drained and rinsed

1 sachet of vacuumed packed beetroots (we use Lovebeets)

½ spanish onion, finely diced

1 continental cucumber, 2cm diced

1 lime, juice

cracked pepper


INSTRUCTIONS

  1. Cut your beetroots into 8’s.
  2. Place your cucumber, spanish onion, beetroots, lentils and corn into a serving bowl and toss to combine.
  3. Finish with the juice of your lime and season with cracked pepper.
