Wintery Good Apple and Cinnamon Rice Porridge

Refined sugar free – Gluten free – Nut free – Egg free – Dairy free – Grain free – Vegetarian – Kid approved

Don’t let its’ name detract you from making this wonder. So creamy, so delicious and so warm for those blistering cold mornings (It’s great in other seasons too). Try it on the kids and they will definitely be asking for seconds. Our tip is to make a big batch, it sits perfectly well in the fridge for 4-5 days. To heat, just add a tad more milk to make it your desired devouring consistency.


Gluten free porridge

INGREDIENTS

½ tsp ground cinnamon

1 apple of choice, grated

1 cup milk of choice

½ cup Greek/ Natural yoghurt (use coconut yogurt for dairy free and vegan option)

1 cup rice flakes

¼ tsp Vanilla essence

2 Tbs slivered almonds (omit for nut free option)


CONVENTIONAL INSTRUCTIONS

  1. Combine rice flakes, grated apple, milk, vanilla and ¼ cup of water in to a medium pot and simmer over a low heat for approx. 7-9 minutes or until warm but not boiling and the rice flakes have softened and thickened.
  2. Remove the pot from the stove and stir through yoghurt.
  3. Top with slivered almonds and sprinkle with cinnamon to serve.
