Gluten Free Banana Pancakes

Thermomix option – Refined sugar free – Gluten free – Nut free – Dairy free – Vegetarian – Lunchbox friendly – Kid approved – Freezer friendly

SERVES: 10-12 pancakes

These pancakes came about because the kids love pancakes and they are packed with sugar so we needed an alternative. Monica classes herself as a bit of a pancake queen and these will not disappoint. The great think is you can make them dairy free, non gluten free anything, they are so versatile. Chuck them in the kids lunchbox too for a treat at school. Nom, nom, nom!

For a bit of a change or something a tad naughty but still nice, try adding a couple of tablespoons of cacao powder to your pancake mix before cooking.
