Crunch Granola

Thermomix option – Refined sugar free – Egg free – Dairy free – Vegetarian – Vegan

This simple version of crunch granola is the perfect addition to your yogurt or simply as a snack. Packed full of nutritional ingredients and only using a natural sweetener, it will keep you going for hours. Make a double batch; this mixture will not last long… as it tastes so scrumptious and is so versatile you’ll eat it by the spoonful.

INGREDIENTS

2 Tbs coconut oil

2 cups rolled oats

1 cup unsweetened coconut flakes

½ cup raw cashews, roughly chopped

½ cup raw almonds, roughly chopped

¼ cup sunflower seeds

2 Tbs chia seeds

3 Tbs pure maple syrup

1 tsp vanilla essence


CONVENTIONAL INSTRUCTIONS

  1. Preheat the oven to 150° and line a baking tray with baking paper.
  2. Add all the dry ingredients to a large bowl.
  3. Melt the coconut oil and maple syrup together and then add to your dry ingredients.
  4. Mix thoroughly ensuring the entire mixture is covered.
  5. Spread your granola mixture over the prepared baking tray as evenly as possible.
  6. Put it in the oven and bake for 20-25 minutes, mixing halfway through to ensure even toasting.
  7. Once granola is golden brown take it out of the oven and leave to cool for approx. 10 minutes.
  8. Once your granola is almost at room temperature break up the mixture and store in an air tight container for up to 2 weeks.

THERMOMIX INSTRUCTIONS

  1. Preheat the oven to 150° and line a baking tray with baking paper
  2. Put your coconut oil and maple syrup into your TM bowl2 minutes/100°/Speed 3
  3. Add the remaining ingredients to your TM bowl30 seconds/Speed 2
  4. Spread your granola mixture over the prepared baking tray as evenly as possible.
  5. Put it in the oven and bake for 20-25 minutes, mixing halfway through to ensure even toasting.
  6. Once granola is golden brown take it out of the oven and leave to cool for approx. 10 minutes.
  7. Once your granola is almost at room temperature break up the mixture and store in an air tight container for up to 2 weeks.
